Since its founding in 1885, Tikveš has endured much of European history: Balkan independence, WWI, WWII, and the Cold War. After the fall of communism and Macedonia’s independence, Tikveš’ yields were lowered and sustainable farming practices replaced industrial ones.

Tasting Notes: This silky blend is rife with favors that emerge from its heavy, gritty Mediterranean terroir: iron, wet granite, plum, cardamom, and strong elements of tart, black raspberries, and bitter chocolate.

Pairings: Roast boar, steak, ostrich.

Soil Type: alluvial gravel, red clay
Fermentation: hand-harvested; fermented in tank
Aging: French oak barrels
