Jordan Salcito founded Bellus while working at Eleven Madison Park. Today, she’s the Beverage Director at Momofuku where she enjoys the playful fusion of her classic Italian wines with inspired Asian cuisine from the Momofuku group. Part of her profits go to Nomogaia, a human rights NGO.

Tasting Notes: A complex wine offering notes of crushed violets, underripe plum, blueberry, and sour cherries amidst a backdrop of warm earth and cedar that transports you to an untouched log cabin.

Pairings: Asian noodles, eggplant Parmesan, artichoke hearts.

Varietal: hand-harvested Frappato
Soil Type: milaro (calcareous sandstone with pockets of clay)
Fermentation: stainless steel with selected yeast
