Several years ago, Pablo Calatayud found a wine cellar on his property that dates back to what he suspects are Roman times. This discovery inspired him to revive ancient winemaking techniques, most notably aging wine in clay pots (called “amphora,” or tinajas in Spanish).

Tasting Notes: Amphorae aging gives this red a soft, velvety texture with full and concentrated notes of tobacco, pepper, and balsamic liquorice.

Pairings: Jamón ibérico, roast beef sandwich, patatas bravas.

Varietals: Monastrell, Merlot, Garnacha Tintorera, Cabernet Sauvignon, Syrah
Soil Types: clay loam, sandy loam
Fermentation: stainless steel fermentation
Aging: 14 months in amphorae
