With vines that are over 80 years old, family-run Clos Roussely creates unusual blends from some of France’s staple grapes. The vineyard is certified organic, and most of the land is cultivated by horse. To promote biodiversity, they even let sheep wander through the vineyard.

Tasting Notes: Bold favors of raspberry and black cherry soften into cedar, tree bark, and spice as the wine begins to breathe, ultimately leaving something reminiscent of quality Burgundy. A superb wine!

Pairings: Steak tartare, salmon, ham, and grilled vegetables.

Varietals: hand-harvested Cabernet Franc, Côt (Malbec), Gamay
Soil Type: clay, limestone
Fermentation: 18 day natural maceration
Aging: 12 months in oak
Special Notes: unfined and unfiltered
