Jean-Marc Lafage, consulting winemaker for importers like Eric Solomon, grows wine in France, Italy, and Spain. His favorite project is this one, in one of the oldest viticultural areas of France, where he and his wife feature Carignan, a grape that’s typically blended into Côte-du-Rhône-style wines.

Tasting Notes: In this wine, macerated black fruit borders on jammy, but exercises elegance and restraint, building into a lovely bout of spice: cardamom, clove, tobacco, and charcoal that linger on the palate. 

Pairings: Strong, spicy cheese, as well as baked desserts and chocolate. 

Varietal: hand-harvested Carignan
Soil Type: schist
Fermentation: de-stemmed, cold maceration, and concrete fermentation
Aging: 80% concrete, 20% demi-muid for 12 months
