Lo-Fi Santa Barbara County Cabernet Franc 2016

Lo-Fi Santa Barbara County Cabernet Franc 2016

Beaujolais-Nouveau, a “gulpable” wine that steals the show at Thanksgiving, is made through carbonic maceration, keeping it light and fresh. Winemakers all over are experimenting with the technique and creating bottlings that are far more exciting. Enter Lo-Fi. Enter funky. Enter Sandman.

Pairings: Turkey, veggie stuffing, cranberry sauce, fruit-based desserts.

Varietal: cabernet franc
Soil Types: gravelly, sandy loam, shaly loam
Fermentation: whole cluster carbonic maceration in stainless steel
Aging: 6 months in stainless steel
