According to ampelography (wine genetics), Carménère is both a child and great-grandchild of Cabernet Franc. It was also once a small part of Bordeaux blends, but has been outcast to Chile where 84% of the world’s population is grown. (China makes a startling 14%, while France just 2%.)

Tasting Notes: Funky! Notes of hot asphalt and tar intertwine with heavy doses of black currant. Tannins pull at your cheeks while a gentle acidity dances on the tongue—a sensual wine experience through and through.

Pairings: Rich steaks or burgers, reindeer, or squid ink pasta.

Fermentation: destemmed; spontaneous malolactic fermentation with native yeasts
