Olivier Rivière moved to Spain in 2004 to convert a fellow winemaker’s vineyard into a biodynamic plot. He immediately fell in love with Rioja and has been making wine there ever since. This cuvée—Gabaxo—means “border jumper” and was Rivière’s nickname when he immigrated to Spain.

Tasting Notes: A supple red with dusty tannins and a perfectly symmetrical bookend of flavors that bridge the nose and the finish: crushed violets, lavender petals, and macerated açaí berries. Simply delicious. 

Pairings: Jucier meats, such as lamb, pork, duck, and steak.

Varietals: Garnacha, Graciano, Tempranillo
Soil Type: clay, limestone, sand
Fermentation: hand-harvested; half whole-cluster & natural yeast fermentation in cement vats
Aging: foudre & oak barrels
