While most winemakers in Beaujolais use shortcuts to ease the winemaking process (like adding sugar to jumpstart fermentation), Jean-Paul Brun is a traditionalist. For example, his wines retain their CO2 thanks to minimal filtration, so they’re protected from oxidizing and don’t require sulfites.

Tasting Notes: Neither too oaky, nor too austere and acidic, this balanced Chardonnay boasts notes of pineapple, pear, and citrus blossoms that form a lovely texture without oak—just extended lees (yeast) contact.

Pairings: Grilled chicken, salads, soft cheeses.
