Since its founding in 1885, Tikveš has endured much of European history: Balkan independence, WWI, WWII, and the Cold War. After the fall of communism and Macedonia’s independence, Tikveš’ yields were lowered and sustainable farming practices replaced industrial ones.

Tasting Notes: Zippy and zesty, the nose is reminiscent of asparagus and lime. The palate is composed of elegant acidity with notes of key lime pie and Meyer lemon.

Pairings: Eggs Benedict, salmon en papillote, crab salad, summer veggies.

Fermentation: stainless steel
Aging: 4 months in stainless steel
