South of the Dolomite mountains lie the picturesque villages of Valpolicella. In this area, Torre d’Orti was once an old castle that served as an outpost to spot danger from across the mountains. It was recently converted into an organic estate that caught the local fever for viticulture.

Tasting Notes: Raisins, dates, and dried figs are complimented by an onslaught of spices: nutmeg, star anise, clove, allspice, and freshly-ground coffee beans intertwined with blackberry, dark cherry, and plum.

Pairings: Steak with pepper sauce, braised beef, bûche de Noël, or baklava.
