Thanks to recent advances in irrigation tech that taps into wells filled with
ocean water, Mexican vintners can now grow grapes in a region that was
previously too hot and arid. Valle de Guadalupe is the best appellation, but
vintners continue to experiment to find the best grapes for Mexico’s rare terroir.

Tasting Notes: Aromas of vanilla and baking spices give way to vibrant
minerality with notes of pineapple, peaches, and brown butter on the palate.

Pairings: Crispy fish with mango salsa, chicken tacos, grilled octopus.

Varietal: Chardonnay
Soil Types: porous, gravelly soils
Fermentation: French oak barrel
Aging: 4 months in French oak
